Eczema Friendly Curry
Eating eczema friendly foods requires you to eliminate many of the dark green leafy vegetables. So it becomes really important to get a lot of lighter green vegetables such as celery into your diet on a daily basis. Try this delicious eczema friendly curry if you have mild eczema. It does contain cashew nuts and spices, so avoid eating this dish if you have a nut allergy, or are experiencing severe eczema flare ups.

½ Cup of Organic Raw Cashews (unsalted), soaked
1/2 bunch of Organic Celery
5 Organic Spring Onions/ Shallots
1 large Organic Garlic Clove
1 Cup of filtered water
½ tsp Organic ground Cumin
½ tsp Organic ground Coriander
Organic Unrefined Salt
⅛ tsp of Organic ground Tumeric
⅛ tsp Organic ground Cinnamon
Organic Golden Flaxseeds
Rice Bran Oil
Organic Basmati Rice
Firstly, if the cashews have not been soaked, place them in a bowl of warm purified water and set aside.
Finely chop the garlic and sauté in a saucepan on a low heat. Wash the celery and shallots, and finely chop, add to the garlic and add ½ Cup of filtered purified water to the pan, cover and allow to simmer for about 10 mins.
While the veg are simmering, prepare the rice, rinsing it first and then cooking it as you prefer.
To make the curry sauce, drain the cashews and place into a food processor; add the four curry spices, and the other ½ Cup of filtered purified water. Process until well blended.
Once the vegetables are sautéed, add the cashew curry paste to the vegetables, cook on a low heat for 10-15 minutes. Keeping the heat low activates the cashew nuts.
Serve with rice, sprinkle with flaxseeds and enjoy this simple eczema friendly curry, it is a great dinner option for a cool winters evening.
